Homemade salad dressings are incredibly easy to make at home and are a logical way to really reduce refined sugar, refined sodium, industrially refined/processed oils and food additives and preservatives from your day-to-day diet.
So, today I introduce to you my (plant-based) Caesar salad dressing option that takes just minutes to make in your blender!
Garlicky Creamy Caesar Dressing
Yield: approx. 1 1/2 cups
1 cup organic raw cashews (soaked for 2 hours prior)
3/4 cup filtered water
2 tbsp. organic Dijon mustard
2 tbsp. nutritional yeast
6 tbsp. freshly-squeezed lemon juice (adjust to preference, working up to 6 as desired)
4 tbsp. extra-virgin olive oil
5 cloves garlic (adjust to preference)
1. Drain and rinse cashews. 2. Combine all ingredients in a blender and blend until smooth. *With an organic mustard, look for a short, whole foods-based ingredient list. They're out there! That's it! The great thing about this recipe is that it is balanced with fat, fiber and protein, which supports blood sugar balance and keeps you feeling fuller, for longer. Nuts and seeds provide a triple-whammy benefit, as they in themselves are a source of fat, fiber and protein. Nutritional yeast is deactivated yeast, provides a subtle cheesy flavour and is a source of plant-based protein and B-complex vitamins (vitamins that provide an energy source for the cells of our body). The anti-inflammatory property of garlic not only helps combat inflammation in the body, but garlic also supports immunity and provides a food source for the beneficial (probiotic) bacteria of the gut!
