Tropical Hydration!

BUH BYE, CALGARY WINTER!!! 

 

Let me count the ways in which spring is REFRESHING!  With this particular change in season, that is so anxiously and excitedly anticipated after a long, cold and DRY winter(!), comes a change in key foods and a need to CLEANSE and HYDRATE the body!

 

So, inevitably, out come even more green juices and smoothies, beets (can’t wait to get my hands on some golden beets at my local farmers’ market) and salads that wake your body UP from its recent hibernation!

 

This recipe below is no exception!  I LOVE pineapple, cucumber, lime and cilantro, so if they can be combined in the same recipe, even better!  While I love juicing pineapple, cucumber and lime with other ingredients and in various combinations, new salad ideas are enthusiastically welcomed after all of the earthy, grounding, comforting, hot dishes that have dominated my diet for the past few months.

The Recipe

 

Yield: approx. 6 servings

Total Time: 10 minutes

 

Ingredients:

 

1 pineapple, chopped

1 English cucumber, chopped

2 limes, zested and juiced

⅓ cup cilantro, roughly chopped (*I added in more - I eyeballed it according to appearance)

Sea salt and pepper (optional) (*Yes, please!)

 

Directions:

 

1. Combine all ingredients and toss lightly to distribute the lime juice and zest evenly.

2. Season with sea salt and pepper, if desired.

3. Serve immediately, or keep chilled until ready to serve.

 

Nutritional Highlights

 

Pineapple:

  • Is an excellent source of antioxidant Vitamin C

  • Is a rich source of antioxidant mineral Manganese, required for the growth and development of bones and joint tissue, protein, cholesterol and energy production, and the metabolism of glucose/digestion and utilization of food in the body

  • One of its digestive enzymes, bromelain, may have potential anti-inflammatory benefits in the body

  • Is hydrating to the body, due to its water content!

 

Cucumber:

  • Is a good source of vitamin K, required for blood clotting/coagulation in the body, also supporting bone health and stimulating hemoglobin (the protein in red blood cells responsible for carrying oxygen throughout the body)

  • Is hydrating to the body, due to its water content!

 

Lime:

  • Is an excellent source of antioxidant vitamin C, supporting the functioning of the adrenal glands and thyroid gland of the Endocrine System; it also possesses immune-boosting and anti-inflammatory properties

  • Is hydrating to the body, due to its water content!

 

Cilantro:

  • Is a good source of vitamin K, required for blood clotting/coagulation in the body, also supporting bone health and stimulating hemoglobin (the protein in red blood cells responsible for carrying oxygen throughout the body)
