Ghee, or clarified butter, is a healthful ingredient as part of your whole foods diet. Clarified butter is unsalted butter in which the water, milk protein (i.e. casein) and milk sugar (i.e. lactose) have been separated/extracted from the remaining saturated fat. Therefore, it is a terrific option if you'd like butter to be part of your diet, but are not interested in or possess sensitivities to the milk solids traditional butter contains.
Ghee may serve various functions:
It possesses a high smoke point (remains stable at high temperatures), so is an excellent choice for high-heat cooking
It may be used as a substitution for other ways in which you may already use and enjoy traditional butter (i.e. to add some flavour to steamed/roasted veggies, in baking recipes that call for butter, etc.)
Ghee is rich in both Vitamin A (responsible for vision, immune function, cellular communication, healthy skin and membranes) and Butyric Acid (involved in metabolic health, an energy source)
Possesses the ideal ratio of Omega 6 to Omega 3 essential fatty acids: a ratio of 1.5:1
Aids in the absorption of fat-soluble vitamins
I encourage you to try out this product if animal foods are part of your diet, and as a means of enjoying the benefits of organic butter without the concern or potentially unpleasant effects of the associated milk solids. Your diet requires healthy fats, including some saturated fat. Ghee may certainly be one of those fats, if you so desire!
