Cleansing Beet Slaw


My favourite 'slaw' option!


This cleansing apple, carrot, beet, parsley and lemon slaw is one of my favourite from-scratch options as a side dish/salad, or topping on a burger, in tacos, or in a wrap!


And...it's perfectly suited to the warm, sunny days of spring and summer when you most often crave the crisp, refreshing and cleansing food options!


As it's quick-and-easy to make, is fiber-rich (supportive of digestion) and oh-so-fresh-and-tart tasting, it's most definitely 'Jess-Approved'!


With these types of recipes, I eyeball the ingredients for relative proportions to one another, using appearance and taste and indicators. You can't really go wrong here!


Here's what I did!


Cleansing Beet Slaw


Yield: approx. 4 cups


Ingredients:


  • 1 medium-large beet, peeled and grated

  • 2 medium-sized carrots, grated

  • 1 red apple, grated

  • 1 small bunch Italian parsley, chopped (including the stems)

  • Juice of 2 lemons


Directions:

  1. Once prepped, combine the beet, carrot, apple and parsley in a mixing bowl and toss to thoroughly combine.

  2. Drizzle lemon juice over the mixture and toss the ingredients to coat, not only to add a fresh burst of flavour, but to prevent the apple from browning as well.

  3. Spoon into your favourite serving dish as a side salad offering, or spoon onto your main dish item as a condiment (i.e. burger, tacos).

*Store leftovers in an airtight glass container and store in the refrigerator. Consume within 3 days' time.


I've even enjoyed a portion of this slaw as part (or all) of the fruit/vegetable component in my smoothies (i.e. approx. 1/2-1 cup, depending on what else is being added to the smoothie).

About a few of the key ingredients...


Beets ~

  • Contain a group of phytonutrients (plant-based nutrients) called Betalains, which provide anti-inflammatory, antioxidant and detoxification support[i]

  • Betalains particularly support Phase 2 (of a few phases involved) of liver detoxification; while Phase 1 transforms unwanted substances in the body into neutralized substances, Phase 2 supports the excretion of these neutralized substances from the body[ii]

Lemon ~

  • While an acidic fruit, the metabolism of lemon by the body leaves an alkaline residue in the body (highly desirable!)

  • Therefore, lemon is extremely valuable for helping to alkalize the internal environment; inflammation loves to thrive in an acidic environment!

  • Lemon also supports stimulation of digestive juices and metabolism, the Immune System and detoxification by the liver as a highly cleansing, whole food ingredient
