Stuffed Peppers with Garlic Cashew Spread
'Tis the season for some festive-looking appetizers! In searching for new and different ideas come this holiday season, I came across the following recipe. With miminal prep time and ingredients, what you can expect is a clean, refreshing, highly-nutritious (and crunchy!) flavour profile and texture, I knew this one was a keeper!
I did make one adaptation to the recipe - substituting Bell peppers for the originally-noted mini-peppers, simply due to accessibility and cost. I was drawn to the fact that the recipe uses raw cashews, as they provide a creamy texture once soaked overnight and then processed in the food processor, providing a healthy source of essential fatty acids and protein for the body.

Bell Peppers –
Are an excellent source of Vitamin C, particularly the red variety
Valuable source of health-supporting sulfur compounds (may possess anti-cancer benefits)[i]
Raw Cashews –
Are an excellent source of copper (assists with the utilization of iron in the body, bone and connective tissue development and the production of hair and skin pigment)
Are a good source of phosphorus, manganese, magnesium and zinc
A source of “monounsaturated fat”; can assist in lowering the level of triglycerides in the blood (fats carried in the blood – high levels of triglycerides contribute to an increased risk for heart disease)[ii]
Apple Cider Vinegar –
Vinegar assists with killing pathogens, including bacteria
Assists in lowering blood sugar levels
Helps the body to maintain an alkaline pH level
Involved in detoxification of the body
Stimulates cardiovascular circulation[iii]
